Let's Talk Meat

As Director of Industry Relations at the Minnesota Beef Council, I talk about beef all the time. It is fun to talk and network with others in the meat industry. This week, I had the privilege to go to Nashville, TN for the Annual Meat Conference (AMC) where we of course talked about meat. My favorite meat on the plate is beef!

Let me share a few insights from the show with you.

We learned meal kits are a hot item, if you didn’t already know that. People like them because they save on planning and shopping time, are a great way to try new recipes, healthy, less food waste and FUN! Have you tried any meal kits?  There are ones you can order through subscription companies, but your local grocery store, Coborn’s, Hy-Vee and Cub also have them.  Recently, I tried the Bourbon Peppercorn Steak Tips from Cub. It was delicious!


 Have you heard of Beefshi?  I’m not much of a sushi fan, but I definitely had to try Beefshi. Beefshi is an innovative new sushi-style concept that features convenient beef products like pastrami, roast beef, summer sausage, hot dogs, corned beef and bologna prepared in rolls with rice and vegetables.

Beefshi recipes taste as good as they look and can be enjoyed individually as an appetizer or grouped together as a full meal.  They had the Reuben Roll, New York Deli Roll and the Texas Asade Sushi there to try.

According to the Power of Meat report, 83% of shoppers buy just a handful of cuts.  What beef cuts do you buy when shopping?  Let’s look at a cut you may not have tried. Have you ever cooked a Flank Steak at home? You might also have heard it called London Broil. The Flank primal is located below the Loin. Cuts from this area are lean with lots of intense beef flavor, and best when braised, or marinated and grilled or sliced thin and then stir-fried.
