Barbecue, burgers, tacos and ice cream all on the same block? Count me in!
The Anoka Food Truck Festival hosted over 45 trucks in Downtown Anoka this past Saturday. Choices ranged from a wide variety of tastes, including Mexican food, Greek gyros, Korean cuisine, and classic barbecues. The dessert lineup was just as exciting, from edible cookie dough to mini donuts to classic Ben & Jerry’s ice cream. I’m not exaggerating when I say the crowd and food choices were of Minnesota State Fair caliber. Being the Type-A person I am, I knew I’d have to come with a narrowed down list of choices. I decided on a beef taco and frozen yogurt for dessert. Plus, stealing a sample of whatever my friends were getting in-between.
My first stop was the Turbo Taco truck; their beachy blue truck and colorful taco menu had me sold. I ordered the ground beef taco that was topped with sharp cheddar, verde crème, house salsa, shredded lettuce and pico de gallo. I also asked for their mango salsa on top for a fun twist.
Even though they had a 2 for $10 deal and their other tacos looked amazing too, I stuck to one taco. I knew I’d definitely be treating myself at one of the dessert trucks later, so this was a prime time for portion control.
My dessert truck choice was Fro-Yo-Soul. I love getting frozen yogurt because there are so many choices – meaning you can make it as healthy or indulgent as you’d like. I chose a Dutch chocolate frozen yogurt and added fresh strawberries, Oreos, chocolate chips, and sprinkles. Knowing I wanted to lean toward the indulgent side with my toppings, this was another prime time for portion control. I only filled the cup halfway with frozen yogurt and the strawberries were my main topping. If you’re looking to make this an even healthier choice, stick to only fresh fruit, nuts or granola toppings with a small base of frozen yogurt.
Did I get sprinkles just so I could take a cute picture? Yes. Did I forget to take a picture until my fro-yo was melted and halfway gone? Also yes.
This event was such a fun way to try foods everyone from the trendiest foodie to the pickiest eater could appreciate. And if you’re bummed you missed the Anoka Food Truck Festival, don’t worry! The St. Paul Food Truck Festival is on August 18th, where they’ll have many of the same trucks and tasty beef options.
See you back here for our next beef adventure!
